the best way to prepare duck or goose is to soak it overnight in buttermilk....this draws out a lot of the nastiness. then I like to inject a good marinade into it ( Franky...I don't mean screwing the bird)...I like to use either a Creole seasoning, a Jamaican Jerk (easy ...Franky ) or one of my favorites a mango salsa marinade.
then you can either bake it , or grill the bird (if you grill it...I always wrap it with thick cut bacon to help it stay moist and add more flavor)....or you can also deep fry the bird...that is the best...locks it all the juice and anything is better deep fried....looking for any other good recipes gimme a hollar , I have a million of them.
