Killer Instinct. Actual substance to the combat, and it's got some cool as hell characters, my favorite being Jago.

Agreed mortal kombat's system is lame as hell, it has no depth at all.  Anyone can pick that shit up and mash buttons.

That's what makes it fun, though. You can watch someone who's never played before totally kick the person's ass who is obsessed with the game.
